Beef Meatball & Tomato Salad
with baby tomatoes & butternut half-moons
Golden butternut is coated in NOMU’s Italian Rub and oven-roasted to perfection. Succulent beef meatballs, sided with a zingy tomato, anchovy & Italian-style cheese salad. Garnished with pops of nutty pumpkin seeds.

READY THE ROAST
Preheat the oven to 200°C. Spread the Butternut on a roasting tray. Coat in oil, the NOMU rub, and season. Roast in the hot oven until golden, 30-35 minutes (shifting halfway). Alternatively, air fry at 200°C until crispy, 20-25 minutes (shifting halfway).
POP THE PUMPKIN SEEDS
Place the pumpkin seeds in a pan over medium heat. Toast until golden brown, 3-4 minutes (shifting occasionally). Remove from the pan and set aside.
FRY THE MEATBALLS
Return the pan to medium heat with a drizzle of oil. When hot, fry the meatballs until browned and cooked through, 8-10 minutes, shifting as they colour. In the final minute, baste with a knob of butter, and remove from the pan.
SENSATIONAL SALAD
In a salad bowl, combine the umami dressing, the salad leaves, the baby tomatoes, 15ml [30ml]|#7DA0D7 of olive oil, and seasoning.
