One Pot Creamy Bacon Pasta
with baby spinach & pumpkin seeds
Tuscan architecture has inspired many house designs in South Africa, but let’s bring that inspiration into South African kitchens as well, Chef! Al dente gnocchi shell pasta is coated in a buttery & tangy tomato paste sauce and mixed with sun-dried tomato, salty bacon & earthy spinach. The addition of sour cream balances the meal and the toasted pumpkin seeds add a lovely crunch. A tasty Tuscan dinner awaits.

TOAST
Place the pumpkin seeds in a pot over medium heat. Toast until golden brown, 3-4 minutes (shifting occasionally). Remove from the pot and set aside.
BACON
Return the pot to medium-high heat with a drizzle of oil. Fry the bacon strips until browned and crispy, 1-2 minutes per side. Remove from the pot and drain on paper towel. Roughly chop and set aside.
ONE POT
Return the pot to medium heat with a knob of butter. Fry the garlic and the tomato paste until fragrant, 1-2 minutes. Add the pasta and 300ml [500ml]|#7DA0D7 of water. Cook until the pasta is al dente and the water has almost evaporated, 10-12 minutes. Mix in the sun-dried tomatoes, sour cream, bacon, baby spinach, and a splash of water. Simmer until combined and the spinach is wilted, 1-2 minutes. Remove from the heat and season.
