Beef Rump Strips & Paprika Couscous
with baby tomatoes & sour cream
Before being transformed in pimentón spice, chilli peppers are smoked over fire for that distinct, camp-fire aroma. By adding what we call ‘smoked paprika’ to this couscous dish, you will infuse pops of pleasant smokiness throughout the dish – from the plump peas, buttery garlic corn, to the pan-seared beef rump strips. Served with tangy baby tomatoes and dollops of sour cream.

Couscous
Boil the kettle. Place the Couscous and peas in a bowl with 75ml [150ml]|#7DA0D7 of boiling water. Stir through a drizzle of olive oil and seasoning. Cover and steam until rehydrated, 5-8 minutes. Fluff with a fork.
Corn
Place a pan over medium-high heat with a drizzle of oil. When hot, fry the Corn until lightly charred, 3-4 minutes (shifting occasionally). In the final 1-2 minutes, add a generous knob of butter, paprika, and garlic, and fry until fragrant. Remove from the pan and set aside.
Beef
Return the pan, wiped down if necessary, to high heat with a drizzle of oil and a knob of butter. Pat the Beef strips dry with paper towel and season. Fry the beef strips until browned, 20-30 seconds (shifting occasionally). Remove from the pan and reserve any pan juices.
TIME TO EAT
Combine the Couscous with the corn mixture, baby tomatoes, and seasoning. Bowl up the paprika couscous, top with the beef and all the pan juices. Dollop over the sour cream and garnish with the coriander. Enjoy, Chef!
