Chicken & Wasabi Mash

Take traditional mash to a new level of taste by adding the sweet, pleasant heat of wasabi. This elevated version perfectly complements golden chicken breast served with a homemade pickled veggie medley, featuring baby marrow, plump edamame beans & sharp radish. Garnished with dots of black sesame seeds, spring onion and finished with salty soy sauce.

  • Oil (cooking, olive or coconut) (optional)
  • Seasoning (salt & pepper)
  • Water
  • Paper Towel

  1. MMMASH

    Place the Potato in a pot of salted water. Bring to a boil and cook until soft, 15-20 minutes. Drain and return to the pot. Add the wasabi (to taste), mash with a fork, season, and cover.

  2. QUICK PICKLE

    In a bowl, add the baby marrow, edamame beans, Onion, a splash of water and the pickling liquid. Toss to coat and season.

  3. TASTY Chicken

    Place a pan (with a lid) over medium heat. Pat the Chicken dry with paper towel and lightly coat with cooking spray or oil. When hot, fry the chicken on one side until golden, 4-5 minutes. Flip, cover with the lid, and fry until cooked through, 4-5 minutes. Remove from the pan and rest for 5 minutes before slicing and seasoning. Alternatively, air fry at 200°C until cooked through, 10-12 minutes (shifting halfway).

  4. TIME TO EAT

    Dish up the mash alongside the Chicken, the pickled veggies, and sprinkle over the sesame seeds. Drizzle over the soy sauce. Dig in, Chef!
