  1. Veggie MEDLEY

    Preheat the oven to 200°C. Spread the Cabbage on a roasting tray. Coat in oil and season. Add in the lentils and roast in the hot oven until slightly crispy, 25-30 minutes (shifting halfway).

  2. MAKE THE MASH

    Place the Potato in a pot of salted water. Bring to a boil and cook until soft, 15-20 minutes. Drain and return to the pot. Add a knob of plant-based butter (optional). Mash with a fork, season, and cover.

  3. FOR THE UMAMI

    In a bowl, combine the Mayo, vinegar and sweet soy mix, dried chilli flakes, crispy onion bits, seasoning and set aside.

  4. SOY-GOOD GREEN BEANS
