Hearty Chicken Soup
with green cabbage & fresh herbs
It’s difficult to beat homemade chicken soup, especially if a rich stock is complemented with high quality veggies and spices, Chef! Shredded pieces of chicken is swirled together with silky leeks, crunchy carrot, baby corn, aromatic celery, strands of cabbage and infused with bay leaf. Garnished with fresh parsley.

START THE SOUP
Place a pot with a lid over medium-high heat. When hot, add the Leeks and lightly coat with cooking spray or oil (optional). Fry until soft and slightly golden, 4-5 minutes (shifting frequently). Add the Carrot, celery, and Cabbage, and season. Allow the mix to cook together until fragrant and slightly browned (shifting frequently), 6-8 minutes.
Chicken & BAY LEAF
Add the Chicken stock to the pot and top with 500ml [1L]|#7DA0D7 of water, add in the bay leaf/ves, NOMU rub, and chicken breast. Reduce the heat, cover with a lid, and simmer until slightly reduced. 25-30 minutes. In the final 4-6 minutes, add the baby corn.
TIME TO SHRED
Remove the Chicken from the pot and shred it with a fork before returning it to the pot. Remove the bay leaf/ves.
EAT TO YOUR HEART'S CONTENT
