Herby Pea & Feta Couscous

This lunch is the definition of freshness. Fluffy couscous is dotted with plump peas and tossed with fresh cucumber, sharp radish, peppery celery, and cooling mint. Finish with creamy feta crumblings and a pomegranate dressing drizzle.

Herby Pea & Feta Couscous

  • Couscous
  • Cucumber
  • Danish-style Feta
  • Fresh Mint
  • Peas
  • Radish
  • Willowcreek Pomegranate Dressing

  1. QUICK COUSCOUS

    Boil the kettle. Place the couscous and the peas in a bowl with about 75ml of boiling water. Cover and steam until rehydrated, 5-8 minutes. Fluff with a fork.

  2. FOR THE FLAVOUR

    Toss the diced cucumber, the sliced radish, and the sliced celery through the couscous & peas. Crumble over the drained feta, drizzle over the dressing, and garnish with the chopped mint.

  • Willowcreek Pomegranate Dressing - 40ml

  • Fresh Mint - 3g
