Boil the kettle. Place the couscous and the peas in a bowl with about 75ml of boiling water. Cover and steam until rehydrated, 5-8 minutes. Fluff with a fork.
FOR THE FLAVOUR
Toss the diced cucumber, the sliced radish, and the sliced celery through the couscous & peas. Crumble over the drained feta, drizzle over the dressing, and garnish with the chopped mint.
