Bring a pot of salted water to boil for the noodles. Cook the noodles until al dente, 3-4 minutes. Drain, reserving a cup of noodle water, and rinse in cold water.
MMMUSHROOMS
Return the pan to medium-high heat. When hot, add the mushrooms and lightly coat in cooking spray. Fry until golden, 5-6 minutes (shifting occasionally). Remove from the pan and season.
