Preheat the oven to 200°C. Place the Potato in a pot of salted water. Bring to a boil and cook until easily pierced with a fork but still firm, 10-15 minutes. Drain and set aside.
SAUCY MINCE
Place a pan over medium-high heat with a drizzle of oil. When hot, fry the mince and work quickly to break it up as it starts to cook. Fry until browned, 3-4 minutes (shifting occasionally). Slowly whisk in the milk until the sauce thickens slightly. Add the cheese and cook until melted. If the cheese sauce is too thick for your liking, loosen with water. Remove from the heat and season to taste.
BAKE
In an ovenproof dish, make a bed of the loaded mince, then top with the Potato and the cheese sauce. Bake until the top is lightly golden and the potatoes are cooked through, 8-10 minutes. Remove from the oven.
