Preheat the oven to 200°C. Spread the Sweet Potato pieces, the Cabbage chunks, and the Onion wedges on a roasting tray. Coat in oil, the NOMU rub, and season. Roast in the hot oven until golden, 30-35 minutes (shifting halfway).

Place a pan over medium-high heat with a drizzle of oil and a knob of butter. Pat the schnitzel dry with paper towel and cut into 1cm strips. When hot, sear the Beef strips until browned, 20-30 seconds (shifting occasionally). Mix in the BBQ sauce, season, and remove from the pan.
CHEESY MOMENT
When the roast has 5-8 minutes to go, mix in the BBQ Beef strips, and sprinkle over the grated cheese. Roast for the remaining time until the cheese is melted.
